Banana Bread with Cardamom and Cacao Nibs

Okay, so here is the third recipe that I have tried from the “Simply Nigella” cookbook, and I have to tell you, IT IS FANTASTIC!!!!!!  When I make something that makes my Brother close his eyes and lean his head back, it is a WINNER!!!

This recipe was soooooooo easy!  I had all of the ingredients on hand, except the yogurt and the cacao nibs.  I could not find the cacao nibs, so I used bittersweet chocolate chips, an easy substitution.  The yogurt and bananas made this bread so moist and the CARDAMOM!!!!!!! OMG!!! It gave it that extra little something special.  Milk or coffee is the perfect pairing for this bread.  The recipe is located in the “Beginnings” section of the cookbook as something to have at breakfast.  I would have this for breakfast, snack, lunch, dinner, brunch, naptime, bedtime, after the gym, after a long night out, basically anytime! Just looking at is as I type is making me want another slice.  I am going to have to take this to my parents house or it will be gone by the end of the night!  Hmmmm, I may have to do like Nigella and sneak a piece just before bed.

This bread would be great to give as a gift during the holiday season, if you can get it out the door before taking a slice.
